A cup of piping hot chai is all you need for a perfect chai time. Be it a small tea party with your family and friends, or just sitting by the window sill to enjoy the evening.
1. Masala Chai
Ingredients: 150 ml milk, 100 ml water, 2 tsp tea powder, 2 tsp sugar, ½ tsp saffron powder, ½ tsp nutmeg powder, 1 tbsp ginger (freshly grated), 10 mint leaves
Method: Boil the water in a saucepan and add grated ginger and nutmeg powder. Let it boil for a minute, then add the tea powder and milkand boil it on low heat. Add sugar and saffron powder and again boil for a while. Finally add mint leaves and remove it from heat. Strain and serve hot.
Ingredients: A few boiled cardamoms, Some tea leaves, Water, ¼ cup milk, Cinnamon bark, Sugar, as required
Method: Add the cardamom and tea leaves to water and brew. Then add milk and let the brew simmer for some time. Serve hot with cinnamon bark.
3. Chai Nimboo
Ingredients: A few dried tea leaves, Sugar (optional), Water, as required, A few lemon skins
Method: Add dried tea leaves and lemon skins to the water and brew. Then add sugar and simmer for a while. Serve hot.
4. Chai Irani
Ingredients: For spice mix- 1 tsp cinnamon powder, 5-6 whole cloves, 1 star anise, 2-3 white peppercorns. Other ingredients- 2 tsp English breakfast tea, 1 cup water, 4-6 cups whole milk, 4 tbsp condensed milk, Sugar, as required.
Method: Make a decoction of tea powder by adding 2 tbsp tea powder into 3 cups of boiling water. Add cinnamon powder, cloves, star anise and peppercorn to the decoction and cover the vessel to prevent the steam to escape. Boil it for around 10-15 minutes till it reduces to half the quantity of the decoction. On another burner, boil 4 cups of milk till it is reduced to 3 cups. Add 4 tbsp of condensed milk and sugar to the reduced milk. Boil till the condensed milk mixes with the milk completely and turns a thick consistency. Stir it frequently, add half a cup of filtered decoction to the milk mixture and serve hot.
