Matar (peas) Puri is one of India’s most popular dishes and equally flexible too – you can have for breakfast, lunch or brunch. Infact, everyone loves to relish it during festivals and special occasions. On the other hand, it is not at all difficult to prepare. Ditch the run-of-the-mill puris and opt for this delicious variety.
Half cup green peas (boiled)
200g potatoes (boiled)
1 tbsp ginger-green chilli paste
2 tbsps green coriander
1/4 tsp lemon juice 1 tsp sugar
3 cups wheat flour
2 tbsp oil (for the dough)
Oil for cooking
Salt to taste

Knead the dough by adding salt, oil and water. Heat some oil in a pan and sauté peas, potatoes, ginger-green chilli paste, green coriander, salt, lemon juice, sugar. Keep it aside for cooling. Now Stuff the dough with a small portion and press it into flat bread. Heat oil in a pan and deep fry till it becomes golden. Serve hot with mango pickle.
