Healthy Recipes: Fresh Soya Salad

Ingredients:

2 cups soy beans, soaked overnight

1 onion (medium-sized), finely chopped

1 tomato (medium-sized) finely chopped

1 capsicum (medium-sized), finely chopped

½ cup yellow pepper, finely chopped

2 tbsp lime juice

salt to taste

mint leaves to taste

Method:

  1. Boil the soaked soy beans with a little salt till they turn tender.
  2. In a large salad bowl, mix together all the ingredients.
  3. Garnish with mint leaves and serve at room temperature.
