Healthy Lettuce Soup

6 cups lettuce, chopped

2 1/2 cups milk

1 cup onions, chopped

2 tbsp whole wheat flour

1/2 tsp olive oil

Salt and pepper to taste

Heat oil in a vessel. Add onions and lettuce and sauté for 2 to 3 minutes.  In a bowl, mix the milk and flour. Add to the above mixture, along with 2½ cups of water. Cook for 10 minutes on a medium flame.Take off the flame, and allow the mixture to cool to room temperature. Blend in a mixer to form a smooth purée. Add the salt and pepper. Return to the pan and simmer for 4 to 5 minutes. Serve hot.
