Fasting Recipe: Delicious Sabudana Khichadi

When fasting, don’t let hunger ruin your mood. Indulge in a delicious plate of sabudana khichdi and stay full for longer. Here is an easy recipe.

1 cup sabudana

2 medium-size potatoes

½ cup peanuts, roasted

8-10 curry leaves

1 tsp ginger, grated

1 green chilli, chopped

1 tsp jeera

¼ cup coconut, grated

½ to 1 tsp sugar as required

½ to 1 tsp lemon juice

2 tbsp oil

Soak sabudana overnight preferably, or for at least 3-5 hours. Next day, drain the water and keep aside. Make sure the water is drained out well. Roast the peanut making it golden brown and keep aside to cool. Then mix in a blender making sure it is coarse. Heat oil and add cumin. Roast till it crackles and turns golden brown. Add the curry leaves and green chillies and fry for half a minute. Add the ginger and sauté it making sure the raw smell vanishes and then add the potatoes. Sauté till it turns a little brown. Then, add the sabudana. Make sure it is loosened otherwise, it will be lumpy. Don’t overcook as it might become lumpy and hard. Lastly, grate the coconut. Mix well. Turn off the flame. Serve the khichdi hot with white chutney or sweet curd.
