Almond broth

  • 15 almonds, soaked overnight
  • 1 cup milk
  • 3 tbps onions, finely chopped
  • 1 ½ cup water
  • 1 tsp oil
  • Salt to taste
  • Black pepper to taste

Method

  • Peel off the soaked almonds, add 1 cup milk and blend into a smooth paste. Keep the paste aside.
  • Heat oil in a pan and sauté the chopped onions.
  • Add 1 cup of water and mix in the chopped cauliflower. Let it boil till the cauliflower is done.
  • Add the remaining ½ cup water and allow the mixture to cool. Blend and sieve the mixture.
  • Mix the cauliflower and almond mixture together and cook on low heat for five minutes.
  • Mix in the salt and pepper and serve hot.

Green Broth

  • 2 tomatoes, chopped
  • 1 cup coriander, finely chopped
  • 8-10 mint leaves
  • 1 small piece of ginger, grated
  • 1 tsp olive oil
  • 1 tsp cumin seeds
  • 1 tsp cornstarch slurry
  • 1 tsp sugar
  • 1 tsp salt
  • ½ tsp black pepper powder
  • ¼ tsp chilli flakes

Method

  • Pour a cup of water in a vessel and boil the tomatoes, coriander leaves, mint leaves and ginger for 10 minutes.
  • When the mmixture cools, blend the mixture, sieve and add half a cup of water once again.
  • Heat oil in a pan, add the cumin seeds and the blended mixture, cornstarch slurry, sugar, salt and black pepper and boil for another five minutes.
  • Garnish with chilli flakes and serve hot.

Sweet Corn Soup

  • 1 cup of sweet corn
  • 1 tsp olive oil
  • 1 tsp garlic paste
  • 1 tsp green chilli paste
  • ¼ cup onions, finely chopped
  • 1 cup of mixed vegetables of your preference, boiled
  • ¼ tsp chilli flakes
  • ¼ tsp oregano
  • 1 tsp pepper powder to taste
  • ¼ cup corn kernels, boiled
  • 2 tbsp cheese, grated
  • 1 tbsp coriander leaves, finely chopped
  • 2 cups water
  • Salt to taste

Method

  • Boil the corn and blend it into a fine paste with half a cup of water.
  • Strain the corn paste and keep it aside.
  • Heat olive oil in a pain, add the garlic and green chilli paste and sauté the chopped onions until they turn transparent.
  • Mix in the vegetables, along with the corn paste.
  • Add the remaining water, chilli flakes, oregano and the corn kernels.
  • Let it simmer on low heat for a few minutes.
  • Garnish with coriander leaves, grated cheese and serve.
