1 CABBAGE PICKLE
Ingredients: 1 cup cabbage, finely chopped, 4 tbsp rai-methi sambhar (check box for recipe), 1½ tbsp red, chilli powder, 1 tbsp til oil, salt to taste
Method: Mix together all the ingredients. Toss well and keep aside. Serve this cabbage pickle with meals.
2 RED CHILLI PICKLE
Ingredients: ¼ kg big red chillies, 1 cup rai-methi sambhar, juice of one lemon, salt to taste
Method: Wash the red chillies and slit them in the middle and keep aside. Mix the rai-methi sambhar along with lemon juice and salt. Stuff the red chillies with this mixture. Store them in an airtight container for two days. You can have this pickle with meals.
3 GARMAR (ASPARAGUS ROOT) PICKLE
Ingredients: ½ kg garmar, ¼ tbsp turmeric powder, 5 cups raw mango water, 1 cup rai-methi sambhar, 2 tbsp red chilli powder, salt to taste. For the mango water-2 kg raw mangoes, chopped, 1 tbsp turmeric powder, 9 cups water (1 cup = 100 ml), salt to taste.
Method: To prepare the mango water, take the chopped mangoes in a vessel and mix in the turmeric powder and salt. Add water and keep the vessel well-covered for two days. After two days, remove the mangoes and keep the water to be used in the recipe. De-skin the garmar, wash and keep aside. Now mix in the turmeric powder, mango water and salt in the garmar. Keep it covered again for a day. Now allow this mixture to dry in the sun for two hours. Add the rai-methi sambhar, red chilli powder and salt. Serve garmar pickle along with meals.
