Lunch Recipes

Ingredients:

  • Ray Cooking Spray – Sunflower
  • 1/2 kg, Marinated mutton
  • 100 gm, Ginger-garlic paste
  • 2 tbsp, Garam masala powder
  • 2 tbsp, Coriander powder
  • 2 tbsp, Cumin powder
  • 1 medium, Onion
  • 1/3 cup, Garlic
  • 1 tsp, Ginger paste
  • 1 tbsp, Turmeric powder
  • 1 tbsp, Red chilli
  • 500 ml, Mutton stock water
  • 2 pinches, Ground pepper corns
  • Salt (as per taste)

Method:

To marinate mutton – mix boiled mutton pieces in curd, ginger-garlic paste and 2 tbsp each of garam masala powder, coriander powder and cumin powder. Keep marinated overnight. Add 7-8 sprays of Ray Cooking Spray – Sunflower, into the pre-heated cooking pan. Add chopped onion and garlic. Add ginger paste, turmeric powder, coriander powder, red chilli powder and garam masala powder with ground pepper corns and salt (as per taste). Cook until golden brown. Add marinated and boiled mutton. Cover and leave to cook for 5 min. Add mutton stock water. Cover and cook for 15 min. Serve with boiled rice.

Baingan Bharta

Lunch Recipes

Ingredients:

  • Ray Cooking Spray – Groundnut
  • 1, Eggplant
  • 3 tbsp, Cumin seeds
  • 15 gm, Ginger
  • 15 gm, Green chilli
  • 2 medium, Tomatoes
  • 1 tsp, Turmeric powder
  • 1 tbsp, Red chilli powder
  • 1 tbsp, Coriander powder
  • Coriander, as per the taste

Method:

Grease the whole eggplant with 4-5 sprays of Ray Cooking Spray – Groundnut. Roast the eggplant on an open flame. The eggplant must be roasted till the skin starts to peel. Once cooked, peel the burnt skin of the eggplant and smash it.  In another pan spray 2-3 sprays of Ray Cooking Spray – Ground. Once the oil is heated, add cumin seeds in the pan, chopped ginger and green chilli. Let it cook for 2-3 mins. Add chopped tomatoes and cook for 3 to 5 mins. Add turmeric powder, red chilli powder, coriander powder and the roasted and mashed eggplant. Let it cook for 5 to 10 mins over a low flame. Garnish with freshly chopped coriander and it is ready to serve.
